Beth's No Fat Fruit Cake

Ingredients:

1 cup mashed, cold pumpkin
4 egg whites (frozen is ideal)
250gm wholemeal Self Raising Flour
1 teaspoon mixed spice
1 teaspoon bicarbonate soda
125gm each raisins, mixed peel, chopped dried apricots, sultanas
1 tablespoon honey
1 cup fresh orange juice

Method:

1. Combine fruits, orange juice and honey in a saucepan and bring to the boil, remove from heat, add bicarbonate soda and allow to cool.

2. Thaw egg whites and beat lightly. Combine cooled fruit and pumpkin with flour and spice and beat till smooth. Add egg whites and stir lightly to combine. Pour into a lined 20cm tin and bake at 165C for 1½ hours.
